Lemon Rice

This is one of the more simpler South Indian recipes. You could say it's one of those meals when you just want something quick and easy. This recipe for lemon rice is a very basic one and you can always add more to it like curry leaves, coriander leaves, peanuts, and/or cashews.
When I make this, I never actually measure anything out as it is all to taste but I have tried to put down some measurements as a starter.
INGREDIANTS:
•1-2 teaspoons each of mustard seed, Bengal gram, and black gram
•Around 2 cups cooked rice (leftovers are fine)
•2 tablespoons oil
•1 teaspoon ginger (to taste) diced
•2 green chills (if not used to spicy food, may want to start with one) diced
•One lemon and/or lemon rice powder (you can probably get this at your neighborhood Indian store. Don't worry if you can't, it's not necessary as long as you have a lemon.)
•Salt (to taste)•2-3 Curry leaves (optional)
•Handful of peanuts or cashews (optional)
•Handful of coriander leaves (optional)

1. Have your mustard seed, black gram, Bengal gram, chili, and ginger ready.
2. Heat up your 2 tablespoons oil in a frying pan.
3. Add in the mustard seed, black gram, Bengal gram once the oil is hot. Let the seeds pop in the hot oil. Don't let it burn! So keep your flame in the medium to high range.
4. Add in the ginger and green chili after about 30 seconds. If adding curry leaves and/or nuts now is the time to add those as well. Let fry for another 30 seconds or so.
5. Add in the two cups rice to the frying pan and mix it all around.
6. Squeeze the juice from the lemon onto the rice mixture in the pan. OR add around a spoonful of the lemon powder. This depends on how sour you would want it. Start off with a small amount and add more after tasting. Mix it together.
7. Add salt. Optional to add in coriander leaves now. Mix for few more minutes and then you're done!
8. Eat your delicious lemon rice!
